Chocolate Sour Cream Frosting
(Makes 3 cups, enough to frost a 2 or 3 layer cake or 30 cupcakes)
Prep time: 10 minutes
8 tbsp butter, cut into 8 pieces
2/3 cup unsweetened cocoa powder
3 cups confectioner's sugar, sifted
1/3 cup sour cream
1 tsp pure vanilla extract
1. Melt butter in a small bowl in the microwave for 45 seconds.
2. Place melted butter in large mixing bowl. Add cocoa powder and whisk until smooth.
3. Add confectioner's sugar alternately with sour cream, blending with electric mixer on low for 1 to 1 1/2 minutes. Add vanilla.
4. Increase speed to medium and beat until light and fluffy (about 1 more minute).
